Very Berry Smoothies - 2.5 pointsSmoothie

1 C Orange Juice
1 C Frozen mixed berries (no sugar added)
6 oz fat-free yogurt (berry flavor)
6 - 10 ice cubes
2 packets splenda
1 tsp vanilla

Mix everything in a blender until smooth.

This is 5 points for the entire batch, but it easily serves 2-3

Twice Baked Potatoes - 3 ptspotato

2 Med potatoes, baked
1/4 C fat free sour cream
2 T FF margerine
1/2 C skim milk
2 T shredded parmesan cheese

salt (to taste)
Pepper (to taste)
chives (to taste)

1/4 C Fat Free Cheddar
1/4 C Fat Free Mozzarella

Bake potatoes until soft. Using oven mitt, tranfser potatoes to lined baking sheet. Cut lengthwise and carefully spoon out potato into bowl, leaving potato skin in a boat-shape. Add sour cream, margerine, milk, parmesan, salt, pepper & chives to potatoes and blend until smooth with electric mixer. Spoon potato mixture back into each “boat.” Bake at 350 for approx 15 min. Sprinkle with cheddar and mozzarella return to oven until cheese melts. Each “boat” is a serving. 4 Servings @ 3pts each.

    Those look yummy, I’ve always wondered what twice baked potatos are, my dad seems to think they’re evil, talks bad about them. lol
