A girl on a mission…

What a FUN Sunday!  First, I went shopping with the husband and bought a couple of new fun plates.  I like to eat off of pretty things and I was getting bored of our current tan selection.  You’ll see a couple of the new one’s in the pictures.  I also am trying to document my food by picture.  I did almost everything today except for my Breakfast which was a grapefruit and a fiber one bar.  I decided to start the pictures after that so, I’ll try to do better tomorrow.  So scroll down and you can see what I ate.  Also, I tried out hungry-girl.com’s recipe for Fiber One Muffins and YUMMO!  They were delish and ONE POINT.  There are pictures of those below as well.

This was lunch.  A quick grilled cheese made with Sara Lee Delightful White and a slice of cheddar cheese, a snack bag of BBQ Baked Lays and a kiwi. (also pictured is a new plate!)

This was supper!  A three ounce sirloin (SO GOOD), garlic mashed potatoes, and green beans sprinkled with a bit of mozzarella cheese. (also pictured is another new plate and little bowl!)

My night time snack was a peach and it wasn’t quite ripe enough which was a BUMMER.  But I also had a couple one point muffins, which totally made up for it.

Although you probably think, “Doy.  I can follow a recipe from a baked mix lady!”  I wanted to start off very simple for my first recipe in pictures!  The recipe comes from here and was something that I have been waiting to try for awhile.

First, you mix the boxed mix with a cup of pumpkin.  It smelled like pumpkin pie and it was HEAVENLY.

Next, you are supposed to add 1/2 cup of egg beaters, but because I feel that eggs are simply more healthy for you (even though I know the nutritional facts, I still like that I know exactly where they came from) so, I used 1/2 cup of egg whites instead.  It ended up being about three eggs instead of only two.

Then you mix all of that together with one cup of water and you get what is pictured above!  It makes ALOT of batter…

…enough to fill 18 muffin cups!  Now all you do is put these in the oven at 400 degrees for about 20 minutes.  While they are in the oven you can do other fun and productive things.

I’ve been wanting to try Roni’s ground meat trick for awhile now.  Not only was it pretty fun to squish around the ground turkey, but it took up almost NO space in my already crowded freezer.  Hy-Vee was having an AWESOME meat sale this week, so we really stocked up, only to get home and have to take EVERYTHING out of our freezer and rearrange!  The ground turkey was left in the fridge because I told the husband I thought I could make it fit and I was right!  Meanwhile, my muffins are filling my kitchen with a pumpkin/apple cinnamon aroma.

Here are the finished products and they are TASTY!  Hungry-girl.com estimates the nutritionals at 95 cal/2 g fat/4 g fiber, although they used egg beaters vs. egg whites, but from what I read they seem to be relatively similar so I’m continuing to count them at one point per muffin.  My only inside tip on these is to make sure you cook them long enough.  I was anxious and pulled them out early and my first bite was WAY too chewy for my liking so I popped them back in.   Alright, well it is pretty late here so I’m going to head to bed and READ!  Hope the pictures didn’t bore you!  (Also, wish me luck on my WI tomorrow :S )

    Love the pictures :) I, too, want to try the FiberOne muffins, but I haven’t found the mix yet…I’m keeping my eye out!
