CRUNCHY PEA SALAD
1 c diced celery
1 c cauliflower cut into small pieces
1 - 10 oz package of frozen peas
1/4 c sliced green onion
3 slices bacon, fried/crumbled
3 T fat free sour cream
3 T fat free or lowfat Ranch Dressing (i use lowfat ranch)
salt & pepper to taste
Whole batch is 10 points… I divide into 4 for 2.5 points each. Also, the original recipe calls for 1 cup of cashews! It’s awesome that way, but I didn’t want all those points!
BLACK BEAN SALSA
1 - 14.5 oz. can of Rotel tomatoes (the ones with green chili’s etc)
1 - 14.5 oz. can of diced tomatoes
1 - 11 oz. can of Shoepeg corn, drained
1 - 15 oz. can of black beans, rinsed & drained
1/2 large Red onion, chopped
3-4 garlic cloves, chopped or pressed
1/4 to 1/2 c chopped cilantro
4 T lime juice
3 T Splenda
Mix all together and enjoy. The way I figure it…it makes about 6 cups.
1/2 c. = 1 pt.
Homemade Whole Wheat Tortilla Chips
For the chips, I just take my low-fat whole wheat tortillas and cut them up and bake them until they get crunchy. Each of MY tortillas is 2 pts and makes 8 large chips. I spray them lightly with olive oil..and sprinkle just a little tiny bit of salt on them…and bake them on a Pampered Chef Stone. They come out wonderful! 8 chips = 2 points.
