I climbed aboard the Spaghetti Squash train!!

and I LOVE it!!!!! Last night I made Roni’s Simple Spaghetti Squash and it was DELICIOUS!! While I didn’t have any baby spinach and I improvised a bit, it was still super yummy and I have some ideas for what to do next time to make it even better! I can tell you though, you don’t need to poke TOO many holes in the spaghetti squash before you cook it or else it can get a little mushy and difficult to work with, lol. But I still managed!! :)

I’m debating making Roni’s Spaghetti Squash Cakes tonight! They just look scrumptious! And on that note, I really have to thank Roni for all her awesome recipes and VIDEOS! I don’t think I would have taken on the spaghetti squash without her informational video on how to cook and prepare it! She has just been such a great inspiration to us all and she’s sparked a cooking frenzy in me! So thanks again Roni!!

I also bought a butternut squash, zucchini and sweet potatoes. I’ve always known I liked sweet potatoes but never have done anything more than sweet potato pie/casserole with them. So I’m looking forward to doing some fries or some other variation. Also, I didn’t even LIKE squash or zucchini until recently. I think that’s because when I was a little girl it was always served to me super mushy and I’m ALL about consistency so that just didn’t work for me. But grilled or sauteed and I’m good to go! So I can’t wait to see which other of Roni’s recipes I decide to try out. They all look so wonderful!

If you haven’t tried spaghetti squash, butternut squash (even though I can’t totally vouch for it yet) or zucchini (oh and sweet potatoes too!) then you are definitely missing out! Give it a try! And with the help of Roni’s videos and step by step instructions it’s totally not intimidating!
