The news isn’t all bad
I’ve realized I’ve been making mostly unhappy posts lately. Yes, I’ve been having a heck of a week. Yes, I haven’t been eating well or moving as much as I should. But there have been some good moments mixed in with the bad.
First off, I just got my federal tax refund … so I’ve been taking care of a few things that I’ve needed to get done, like that oil change.
On Friday, one of my neighbors came into her driveway and asked if I’ve been losing weight. She said she’d noticed … which is really saying something, since I’ve been spending more time at the boyfriend’s than at my own place lately!
And I’ve discovered a really great — and Core-friendly — snack. I put some cottage cheese in my little Magic Bullet Blender (one of the best Christmas gifts I’ve gotten lately) with some cinnamon and Splenda, whip it up and use it as a dip for apple slices.
It’s no caramel dip, but it’s still quite tasty, and, unlike peanut butter, it has no points to count on Core.
I used it as a dip on Friday. Today, I mixed up another batch and stirred in diced apples and halved grapes, so I’ll be snacking on fruit salad. Yum!
