Core Day 3 and a Core Recipe

Yeah, I am finding it harder to find core foods. I guess I need to look around at the menus of folks in the community that are on core to get some ideas. I have to say I love the whole concept of eating whole, low-energy density foods. I’m trying to get my body ready for pregnancy (some day), and what could be healthier for me (and a baby) than to cut out processed foods? I may start following Roni’s idea of the “Flore” plan.

I love cottage cheese so here’s a quick breakfast idea that I love!

CINNAMON APPLE COTTAGE OATMEAL

WW: Core
Serves 1

1 serving oatmeal (rolled oats)

2 tbsp. unsweetened applesauce

2 tbsp. fat-free cottage cheese

Cinnamon

Splenda

After preparing oatmeal as directed, add other ingredients and enjoy! Oh so yummy and easy!

I was entering a recipe into eTools to figure out the points and discovered it was Core! You might like it. I think I have it on the recipes page of my blog too, but just in case, here it is:

Turkey Stuffed Peppers
1 tsp ground basil
1 tsp celery seed
4 bell pepper(s)
1 cup canned tomato sauce
1/4 cup ketchup
1 cup cooked brown rice (I use the Uncle Ben’s pouches, but I hear Trader Joe’s also sells frozen pre cooked brown rice)
1/4 cup Egg Beaters
1 pound lean ground turkey

Cut tops off peppers, removing stem and seeds, reserving tops. Mix everything except the tomato sauce and carefully spoon into peppers. Place peppers in crock pot. Put the tops back on peppers. Spoon tomato sauce around/on top of peppers. Cover the crock pot and cook on low 8 - 10 hours. 5 points per pepper, but also Core. Super easy and yummy.

Good luck with Core. I am still resisting taking the plunge, but it seems like a great way to stay on program while pregnant, so eventually I’ll do it. I’ve started reading about Core, but I’m still anxious about it.
