it’s been a while since i’ve done that…

had leftover chili for dinner.  pretty good.  and had sweet potato chunks / fries.  not really sure how they were shaped.

and…i tried butternut squash.  i bought a little one at least a month ago and kept meaning to make it.  just never got around to it.  so i tried it tonight.  can’t say that i loved it.  half had salt, half had cinnamon-sugar.  it was ok…don’t know that i’ll make it again.  which bums me out b/c so many people like it!  at least i tried…

BUT, i just remembered that i usually like butternut squash ravioli!!!  yeah…LOVE it…i guess there’s enough sweetness in those that i can’t tell what it is….YUM!!!

    Have you registered for your race yet?? Which one are you doing? And what plan are you following? (Do you love the questions? I’m doing my best to motivate you if you haven’t already done all this!)

    The first time I made it I tried Roni’s fries, then another time I just cubed it and added a teensy bit of butter and pepper and now I love to cube it, add about a half tsp to a pan and then “fry” it with some garlic salt and pepper. I’ve also made it sweet as a dessert but I prefer it more like a potato.
