no meat :(
so…i the other day i bought the ingredients for strawgirl’s creamy lasagna and i was going to make it tonight. we usually have meat in the freezer. i opened the freezer - NO HAMBURGER MEAT!!!!!!! :( i am so totally bummed & too lazy / tired (got up at 4:30 and never went back to sleep…and got my 40 min walk in, too!!!) to go to the grocery store. it’s just me tonight - DH had to travel. so i’m just trying to figure out easy / simple things to make. i have zucchini, so i’m gonna try the baked zucchini fries. not sure what else i’ll be eating tonight….could be interesting…or really scary…

introducing…gingeet barbie
so i’ve been having a hard time coming up with a barbie name, like elizabethysmom was. (i had a hard time coming up with my blog name, too!) AND, when i tried to create one on meez, well, let’s just say my computer is ancient and probably doesn’t have all the right hardware/software/programs to run it to create my barbie.Â
so…i decided to go with one name, which is a general name, and then i can put all the attributes i want into it!!!
introducing…gingeet barbie!!! now…what is gingeet, you ask? for starters…it’s pronounced pretty much how it’s spelled…the “g”s are “j” sound as in ginger. it’s gin-geet. it’s what i got called a lot when i studied in israel. it’s a nickname that is given to red heads. and, well, i got the red hair! and i heard it alot when i was there!
now…who is gingeet barbie?
well…she likes to go for walks.
she tolerates runs
she’s a numbers geek (i’m a statistician….)
she’s into health (i’m in the public health sector)
she likes to cook, but not always experiment in the kitchen, like roni & others
she likes to shop
she tries to be organized, but, well…she’s not.  my dad used to have a sign in his office that said “a clean, uncluttered desk is the sign of a sick mind”. uh, i got that gene!!!
she likes dessert, especially chocolate!!!!!!!!!!!
and she loves her family!!!!!!!!!Â
the Barbie oath……you must promise to uphold the Barbie ways which include whining when you feel like it, being bitchy on cue and knowing that NO MATTER WHAT or WHO (yeah even if she is a rich, plastic surgery induced, exercise obsessed, bubble head) comes across your path - that you are Barbie…..beautiful and worthy!!! Size 6 or 60, Porsche or Pinto, flat belly and good boobs or pannus and dried prunes - we are AWESOME!!

zucchini bread
 monday morning: the scale didn’t like all the zucchini bread i ate, or what i ate at the bbq we went to last night! :) so i’m off for my walk…i’ll post more later (prob tonight) - need to finish calculating yesterday’s food log & write up zucchini bread recipe….

ok…this is my first attempt at zucchini bread. and i decided to make the chocolate chip zucchini bread! that’s b/c the recipe used the size pan i had! he he he
we’ll see how it turns out…it’s baking right now.
but — it almost didn’t happen. i like to have as clean of a slate to start with when i cook or back. so i was putting up the dishes and needed to put a pot up. instead, all of the pots & pans in the cabinet went crash!!!!!!!!!!!!! UGHHHHHHHHHH………….not my fault!!!!!!!!!!!!! i’m taking liberty of having a bitch moment….i really appreciate that DH will put the dishes away or put things up when they need to. but…..things don’t always go back in an orderly manner….this was one of those moments!!!!!!!!!!!!
ok…so dishes are put away, and i pull out the blender/food processor that we got as a gift a couple of years ago. never opened it b/c i wanted a different color, but never followed up on it. so i’m trying to get this thing to work…i’m actually half way reading the booklet. the damn thing wouldn’t work. so i took off the food processor part, and put the blender on. again, damn thing wouldn’t work. you could hear the motor going, but none of the blades would spin!!!!!!!!!!!!!!! finally - after about 15 minutes (oh…and oven is totally preheated by now…) i look at the base, and a piece is broken there!!!!!!! ugh….
so i pull out the mini chopper to chop the zucchini. i wanted to use the food processor b/c it has the shredding blade. so i have small pieces of zucchini in the bread instead of nice shreds. so, we’ll see how this turns out. i’m excited.
i just plugged in the ingredients to WW online.  the recipe calls for 16 servings (not sure how big the slices are for that). and whether you use all purpose flour or split it between all purpose & wheat flour, both come out at 3 pts a slice!!!

can you fully substitute whole wheat flour for all purpose flour? i found a couple of zucchini bread recipes i want to try (from cooking light), and they both call for all purpose flour. i don’t do enough baking to know if substituting all or some of the flour for whole wheat flour will affect it.
thoughts anyone?

trying to wake up to go running…i’ve just been tired this weekend…b/c of the craziness of yesterday (including the weather) i didn’t get my walk in.Â
wasn’t that successful at the mall, which was ok. i was really going to see one or two things. however, i realized i am now excited to shop again because i’m feeling better about myself — image wise, that is. for a while there, i didn’t realize that i really didn’t like to shop because i a) didn’t like how the clothes looked on me or b) i didn’t like the sizes that they were. it was more A than B. however, now that i’m feeling better about my self & my body, watch out american express - i’m ready to shop!!!!!!!!!!!!Â
while at the mall yesterday - i ran into a friend i hadn’t seen in YEARS! it was good to catch up w/her.
i also introduced myself to a family…i know it’s weird, but i contemplated about this the last time i was at the mall b/c i saw them there, too!!! apparently the wife & i have the same taste in clothes! he he he anyhow…it’s a young couple w/a little girl…and…ok - let me back up a second. i’m usually really good w/names and faces. and i’ll remember the most random things about a person - and it freaks people out!!! even DH is still amazed at this crazy ability i have (long story short - i put 2+2 together about this guy he works with and realized that i had interviewed w/the guy 5 years ago out of grad school and the guy is good friends w/a former co-worker of mine…this was all just based on DH telling me the guy’s first name, one attribute about the guy, and what the guy does at DH’s company…and i still haven’t re-met the guy!!!!!!!!!!!!!!) there’s more…but i’ll just leave it at that.
so…back to this couple. i have seen them at various events over the past year. i never had the opportunity to meet them, but i just recognized them. and this is the 2nd time i’ve seen them at the mall w/the baby. and i know i’ll continue to see them in the future. and when i’ve seen them at the mall - i feel like they might recognize me, but wasn’t sure.  so i just introduced myself to them…
ok…i’m rambling now…that’s another trait of mine…my head is just about awake enough to go running. my body - not so sure! but my head…almost there! :) have a good sunday!

barbie brigade…
at some point, hopefully this weekend…i’ll catch up on the barbie brigade. i had read about it yesterday and was trying to think of one - before barbie/trixie dubbed me as anne klein barbie. i was thinking of something to combine my two homes - a peachy longhorn?!?! or something that was about me, but i saw that collette had already dubbed herself as ravenous red (or something along those terms…). so i’m still thinking about it…but for now, i’ll gladly be anne klein barbie…
so we met w/our photographer from our wedding & picked out the pix for our album. we HAD to do this, since we had already paid for the album! hello…yes, we were slacking on that one. it was fun to look through the pix again, too!!! probably won’t get the album back for a couple of months.
off to shop - that is definitely a 4 letter word in my world! :) more later….
1 commentit’s not a fluke - NSV - and the end of the friday dilemma…
so…we didn’t go to THE restaurant that gave me the dilemma. instead we went somewhere that was just ok…and we’re not going to THE restuarant - DH talked us out of it, which is fine by me. i would’ve gone, but i don’t mind not going, also.
oh…i forgot about my NSV this morning!!! i can get into my skinny jeans!!! woo hoo!!! i had a pair of jeans that kept getting tighter & tighter & i’d still shove my tush into them, when i shouldn’t have. so they’ve been on my floor for a while, and every now & then i’d try to pull ‘em on, but it was tough & i didn’t want to fight it. (yes - i’d break a sweat trying to shove my thighs into these jeans!!!) so last week for kicks, i tried them on, and they pulled up no problem!!! i thought it might’ve been a fluke - you know how jeans stretch as you wear them, right?! well…i thought that maybe after all those times of trying to pull ‘em over my thighs that they might have stretched. so i did laundry last week and hung the jeans up. since it’s unofficial casual friday, i pulled these jeans out of the closet - and they still fit, no problem!!! yeah!!! :) i still have a ’shroom top to get rid of, but i’m getting there. now here’s why i’m excited…i bought these jeans 3-4 years ago, when low rise was the IN thing. now, these aren’t low rise, but they aren’t high rise, either. i’d say the button is in the place between my belly button & my hips - right where my stomach is the biggest. and i was able to put the jeans on & button them, around my belly!!!!!!!!!!!!!! now…if only i’d start doing some ab work, the belly would tone up some more…
we’re finally going to get our wedding album done!!! it’s only been 1.5 years…and it’s all my fault…we’re just going to let the photographer pick out the pix & lay out the pix…ha ha ha. so that’s tomorrow’s activity. i’m hoping it’s not too hot when we get home for me to go for a walk. heck - even if it is hot, i’ll still get at least a short walk in…
