I love, love, LOVE muffins for breakfast! I’ve been looking for a healthy muffin recipe for a LONG time, and the best I came up with had like 3.5 points per muffin and took a long time to make (See Morning Glory Muffins under recipes category for recipe). They are DELICIOUS, but a little too time consuming for everyday life. Well, FiberOne muffin mix… you and I are BFF. I bought one of these FiberOne mixes (Apple Cinnamon variety is all they make) at Super Target this weekend, and I remembered that Hungry Girl had a great idea for transforming them from 4pt whoppers into 1pt treats
So I made them… and they were… DELICIOUS
I recommend trying this if you like muffins and have access to the mix. Here’s the HG low down:

I can’t wait to have one or two with coffee, fruit, and yogurt in the morning for a filling breakfast!

The husband and I just got home from our Friday night tradition: Trader Joe’s. And I found the most perfect snack! TJ’s 100 Calorie pack Oatmeal Chocolate Chip Cookies. These are G-R-E-A-T! Unlike other 100 calorie packs, they taste like a healthy serving of REAL cookies. Real butter, real sugar… everything! All for 100 calories, 2.5g fat, and 0 fiber ( = 2 points/pack). Each pack contains 8-10 cookies that are 1-2 bites each, so you get a great snack. We devoured a bag between the two of us when we got back, and I honestly would eat the whole box if they weren’t pre-portioned. If you have a TJ’s nearby, get these and ditch those other dried up ones on the market!

So I just got home from shopping at both Trader Joe’s (TJ) and Harris Teeter (HT), my two local favorites. I loaded up on great choices for the week including some new finds:
1. 100 Calorie Hostess Crumb Cakes:

Oh my gosh… these are phenomenal! And only 1.5 points for 3 little cakes! I wanted to try the cinnamon coffee cake variety, but these were not available in the store. I purchased the blueberry ones, and they were far better than I had imagined! I’m a big fan of “the coffee break,” and I can’t wait til Monday (eek!) when these will make the rotation. If you’re interested in trying them, there’s also a new75 cents off coupon available at www. hostesscakes.com/100/coupons.html.
2. Ak-Mak Crackers:

These were also a great find at TJ’s. I think there are just 2 points in a serving (which is 5 crackers… my box was quite broken up, so I’m still trying to figure out how reasonable that really is). I’m looking forward to eating these with homemade soups or adding a Laughing Cow Cheese wedge for a delicious 3 point snack.
3. Quaker Oatmeal to Go:

As a busy medical student, I’m up and out the door very much before the sun each morning. Usually I have time to get a healthy breakfast in before I go, but for the times I don’t, I’m often scrambling to throw something together. That’s why I bought these today. For 4 points, these seem like a healthy alternative to my often-boring oatmeal. There’s even a suggestion for heating them up in the microwave! I’m looking forward to trying this Monday. I got the Brown Sugar Cinnamon variety… Yummy!
I bought a lot more delicious new things while at the store. You’ll be seeing them throughout the week on my daily journal posts, and I’ll try to give my opinion on them then.
