Yesterday I got a hankering for Capinato.  It’s a traditional Italian vegetable dish that’s typically served cold on toasted Italian Bread (similar to bruschetta, only heartier).  Yum!  Every year about this time I get the craving for Italian food.  I have been fortunate enough to travel abroad and spend time in Tuscany.  Italy is a beautiful country with beautiful people, beautiful food, and beautiful artwork.  They don’t call it ‘Bella Italia’ for nothing! 

 Anyway… the Capinato is a recipe I brought home with me that I absolutely love.  The great thing is that it is very heart healthy and weight watcher friendly!  Thank goodness! 

Last night I decided I must have Capinato.  So I hit the market on the way home bought all the ingredients and stewed all evening.  My husband was in heaven from the smell alone!  I can’t wait to have it for dinner tonight!  Believe it or not I haven’t had a chance to eat any yet but tonight it’s no holds bar, I’m digging in!  The great thing is that it makes a large stew pot full, so I often freeze half of it for later, unless serving it at a party (even then there’s plenty to go around)! 

I haven’t had a chance to accurately measure it all out to find a points value but I’m estimating 1 Cup to equal 2 or 3 points.  I bought some whole wheat bread and plan on having that with a spinach salad tonight after soccer.

    Wow, that recipe sounds like it will be delicious! I don’t think I’ve ever heard of it before, but it is worth a try.
