Yesterday
*resists the urge to sing*
So, here are my food choices for yesterday:
Breakfast: An egg sandwhich with cheese, glass of milk
Lunch: So, I actually almsot forgot to eat lunch. When I did, it was about 3 o’clock, and I was just looking for something quick so I could put dinner in the crockpot and head back to campus. So, I ate a ham salad sandwhich, which while possibly not the best choice, I am going to use the piss poor excuse of: It’s in my refridgerator, and it can’t go to waste.
Dinner: So, lunch was at 3, and dinner was at 8. *waits for everyone to stop cringing* This is just going to to be how it is on Tuesdays and Thursdays. Unlike yesterday, the rest of the week starting at 10:30, I go all the way through to 8:30 with 2 half hour breaks, and 1 hour break. Not really enough time to come home. However, Wednesdays I don’t have anything in the morning, so I can stay up later and just sleep in a little (except for this morning, which I’m supposed to be writing a paper that’s due tomorrow, but instead I’m on here. I got my priorities straight, huh?) So, what did I eat that I started cooking at lunch? It was Roast Chicken, potatoes, and green beans. After cooking, I did take the skin off the chicken to help decrease the fat content.
Evening snack: I was in a sweet mode, so I had half-a-cup of Breyer’s Slow Triple Chocolate icecream. That stuff’s great. It only has 120 calories for 1/2 cup serving, and the artifical sweetner they use makes it so sweet that my sweet tooth is satisfied for a couple of days. Which, did I mention that since moving, I’ve had a Braum’s at the end of my street? One of these days I’ll take a picture of the sign from my living room window to give you an idea. The bad thing is, is right after moving in, I wouldn’t even WALK there… I would wait until I was coming home from running errands and then swing through the drive thru and get my ice cream. ARG! Bad me! I’m hoping this Breyer’s will keep me away from Braum’s.
Here’s the recipe to this chicken dish, I had it posted once before, but that was BTC: Before the crash.
Janet’s Roasted Chicken
1 chicken
potatoes
green beans
1/2 cup chicken broth
half a lemon
garlic powder
rosemary
I take the giblets out of the chicken, and set it in the crock pot. I then put the potatoes and greenbeans in around it. I measure out the chicken broth and sprinkle in the garlic powder to taste. Usually I then heat up the broth just to help the powder dissolve a little.
Then, I pour the broth over the chicken and the veggies. I take the lemon, squeeze the juice out over the food, and then go put the leftover wedges in the pot for a little added flavor. Finally, I sprinkle Rosemary (probably about half a cap, I’m not a big rosemary fan, but like a little) and put the lid over it. On high, it takes about 4 hours, on low, 6.
What I like about doing this (other than I can leave it all day), is that then I have chicken for sandwhiches, and then I freeze some of the leftovers until I want chicken and noodles.
